With all this St. Paddy’s Day madness going on I decided to share a salad recipe with y’all. A bed of lettuce, fresh pears, thinly sliced Dubliner cheese, and baked yukon gold potatoes in olive oil & salt. You put the potatoes over the salad and it melts the cheese. Then you drizzle some more olive oil and along with some reduced balsalmic vinegar. It doesn’t seem it, but it’s unbelievably good!
